Spring Quinoa Risotto


Fresh spring vegetables in a creamy and comforting risotto, ideal for a wet spring day. We use the lighter but more nourishing quinoa instead of the less nutritious risotto rice that can leave you feeling bloated and heavy (Italians please don't be too annoyed, we know risotto means rice!).Quinoa (pronounced "keen-wa") cooks in approximately 12 minutes so it's also quicker than cooking a traditional rice risotto and it is packed with nutrients. Quinoa is one of the most "complete" foods in nature because it contains amino acids, enzymes, vitamins and minerals, fibre, antioxidants, and phytonutrients.
